JC Cellars rosés incorporate the traditional "saignée" technique, in which 20% of the juice is bled off after being in contact with the must for a 12 hour period to achieve a bright pink color. The pink juice is then fermented separately at cool temperatures in neutral French oak barrels, which adds a richer texture and mouth-feel, while retaining vibrancy.
